The use of PEF (Pulsed Electric Field) technology, mainly in the food industry , aims to reduce the presence of microorganisms in foods. Our R&D department has developed the generation of a variable high-frequency electric field, obtaining two significant effects: it prevents the precipitation of calcium carbonate in the crystalline form of Calcite, instead promoting its permanence in an amorphous and more water-soluble form, promoting the formation of Aragonite nano-crystals which do not aggregate into deposits, but are rather carried away by the water flow. The treatment with Pulsed Electric Field (PEF) can be successfully used for water disinfection: microorganisms are deactivated through electroporation of the cell membrane. The outcome is an immediate reduction in microbial load and biofilm growth upon activation of APEF
